Went to the grocery store tonight to stock up, and I tried to buy some ingredients for recipes I wanted to experiment making. This salad was inspired by one I saw in Earthfare’s salad bar. I think I did a better job recreating it than I expected!
Becca’s Broccoli-Cran Salad
- 2lb broccoli, cut into florets
- 2/3 cup craisins
- 1/3 cup sliced almonds
- 1/2 cup lite miracle whip or mayo
- 1/2 cup nonfat or 2% milk
- 1/4 cup brown sugar
- 1/4 cup + lemon juice
Steam broccoli in a large sauce pan (it may take 2 batches) and remove to a large bowl, sprinkle with craisins and almonds. Toss with creamy dressing: whisk together mayo through lemon juice, adding more lemon juice and milk as needed. Don’t over stir, as mixture will thicken. (You might end up with excess dressing. use it for a dip or something creative.) Refrigerate and enjoy!
